500 g flour, 1 pinch of salt, 130-150 ml of vegetable milk or water.

For syrup:

600 ml of vegetable milk or water, honey

Vanilla essence, rum essence

The grated peel of 1 lemon

For the filling:

500 g ground hemp seeds (can be mixed with ground pumpkin seeds)

Dahna recommends for sweetening stevia 1 + 1/2 tablespoons, representing the equivalent of 5-7 tablespoons of sugar – one tablespoon of stevia sweetener is the equivalent of 5 tablespoons of sugar.

Method of preparation

Julfa cream: Put the ground hemp seeds in a bowl and pour warm (not hot) water. Wash in several waters until the juice is no longer white. This procedure is repeated several times, until it is noticed that there are no more white dots in the powder, i.e. there is no core left. The juice from the wash is put in a thick sieve so that the seed is not lost through it. The juice resulting from draining is placed in a bowl with a wide mouth, which is placed on the stove over low heat. Collect the foam from above, called “jintiță” and put it in another bowl, where you add spices such as: stevia, vanilla, rum, lemon peel (not orange). Beat the mixture with a whisk and you will have the julfa cream.

Cakes: are made only from flour, vegetable milk and a little salt. Spread thin cakes in the desired shape, rectangular or round, and bake them in a Teflon tray or on a grill on both sides, without oil. After baking, leave them to dry for at least 24 hours.

Then place them in a cake tin and grease each cake with the julfa cream. Repeat the operation with all the cake sheets, until the cream is finished. Leave it for 24-48 hours, in order for the juice of the julfa and the flavours to penetrate well in the cakes. It is not necessary to put syrup on the sheets. Before serving, cut into slices.
